Quick and Simple Frittata

A Frittata is an extremely simple and tasty dish that allows you to use up all those pesky leftovers in your fridge. We use the ingredients in the recipe below, but you can use any combination of vegetables and protein that you have handy. Frittatas are a very versatile recipe that can be enjoyed as breakfast, brunch, or dinner!

How to make Quick and Simple Frittata Recipe:

PREP: Adjust oven rack to middle position and heat oven to 350 degrees F.

BEAT IT: In a medium bowl, crack eggs and add heavy cream. Beat gently to break up the yolks. Be careful not to over beat the eggs as they will puff up in the oven and fall flat into a dense layer once cooled. Add salt, pepper and mix to combine. Set aside.

SLICE, DICE & CHOP IT: The veggie/protein add-ins are very customizable, just use whatever you have available. Make sure to keep the total cooked protein and veggie combo to 2 cups cooked (about 3-4 cups raw) and use contrasting textures.

Prep the veggies and sausage so that they’re ready to go. Dice the sausage and peppers. Slice onions, scallions and give the spinach a rough chop. Set aside.

SAUTÉ IT: Pre-cook all of your protein and veggie add-ins in a 8-9 inch well seasoned (black, shiny and smooth to the touch) cast iron skillet or nonstick oven proof pan. As this pan will be traveling from stovetop to oven.

On medium high heat add olive oil and sausage to pan, cook until brown. Once sausage is brown, add onions, peppers and scallions. Saute until all of your veggies have softened, about 5 minutes, then add spinach. After the spinach has wilted, spread sautéed vegetables and sausage in an even layer. Sprinkle 3/4 cups of the mozzarella/cheddar cheese combo evenly over the vegetables, reserving 1/4 cup for later. The cheese combo is customizable as well. Be sure that at least half of the cheese mixture is soft melting (mozzarella, fontina, gruyere, provolone…etc).

ASSEMBLE IT: Reduce the heat to medium low. Then pour egg mixture over the cooked sausage, veggies and cheese. I sometimes like adding a few uncooked onions or scallions on top for a fresh pop of flavor. If adding any raw veggies on top, be sure it’s not one that contains lots of water, as this would result in steaming which will leave your frittata watery once cooked. Continue cooking on the stove top over medium low heat until the edges start to set and slightly pull away from the pan, about 5 minutes.

BAKE IT: Transfer skillet to preheated 350 degree oven and bake for 15-20 minutes, or until the edges are set and the center is no longer jiggly. Remove from oven and sprinkle the reserved 1/4 cup of cheese evenly over the top. I sometime double that amount of cheese for an extra cheesy frittata. Let rest for 5 minutes, then slice and serve.

  • 1/4 cup cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbs olive oil
  • 3 pre-cooked sausage links
  • 1/2 cup red onion, diced
  • 3 mini peppers, diced
  • 4-5 scallions, chopped
  • 1 cup baby spinach
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
