Healthy Turkey Salisbury Steak with Onion Gravy

Juicy and full of amazing flavor, this healthy version of the classic salisbury steak is one that our whole family loves. The onion gravy is so delicious it feels like you are eating these flavorful turkey patties in a french onion soup. This mouth watering turkey salisbury steak recipe contains less calories and fat than the ground meat version without sacrificing any of the flavor.

This easy salisbury steak recipe is a classic comfort food the entire family will enjoy. As we are always looking for ways to limit how much beef we consume, ground turkey recipes are pretty popular in our house.

Another great thing about this recipe is that the leftovers are amazing. Simply store them in an air-tight container in the fridge for up to 3 days and you have another weeknight meal waiting for you.

Main Ingredients

This recipe uses super easy ingredients that can be purchased from a local grocery store if they are not already in your kitchen. Read the Recipe Card for the measurements.

  • Lean Ground Turkey – We use 93% lean / 7% fat ground turkey. If you feel you need to have ground beef flavor, you can also use a 50/50 mixture of ground turkey and ground beef.
  • Bread Crumbs – Help to keep the ground turkey patties flavorful by absorbing the natural juices during cooking and then releasing them back into the meat. You can also use panko breadcrumbs as well.
  • Dry Mustard – Dry mustard adds a mild, tangy flavor with a little bit of heat.
  • Worcestershire Sauce / Ketchup – Adds depth of flavor and some tanginess to the turkey patties and onion gravy.
  • Beef Stock – Provides the base of the onion gravy. You can also use chicken stock as well.
  • Yellow Onion – We use a yellow onion but you can substitute a vidalia onion as well.
  • Corn Starch – Is used to thicken the gravy.
  • Fresh Parsley – Adds an earthy flavor and a pop of color. You can also use green onions.

How To Make Healthy Turkey Salisbury Steak with Onion Gravy

Step 1: Mix It

  • In a large bowl add the ground turkey, bread crumbs, salt, pepper, ketchup, dry mustard, Worcestershire sauce, liquid smoke (if using) and better than bouillon beef.
  • With a rubber spatula, or using your hands, mix all the ingredients until well combined.

Step 2: Divide and Fry It

  • Divide the mixture into 5 or 6 portions and form into patties (tip: keep a small bowl of water on the side for wetting hands when forming patties).

  • In a large heavy bottom pan or cast iron skillet, over medium-high heat, add 1 tablespoon olive oil.
  • Fry the patties on both sides, 4-5 minutes per side or until no longer pink in the middle. Work in batches if necessary, do not overcrowd the pan.
  • Remove the patties and set aside, scraping off and removing any charred bits from the pan.

Step 3: Sauce It

  • Reduce to medium heat and then add olive oil and onions to the pan. Sauté the onions until golden brown and soft, 5-7 minutes.

  • Add the beef stock, ketchup and Worcestershire sauce to the large skillet.

Step 4: Thicken It

  • In a small bowl, scoop out 1 to 2 tablespoons of the stock from the pan and add the corn starch; mix to combine (this is called a slurry).
  • Add the corn starch slurry back into the skillet. Stir to incorporate and continue cooking until gravy has reduced and thickened slightly.

Step 5: Combine It

  • Season the gravy with salt and black pepper. If the gravy becomes too thick, it can be thinned out with additional broth. 
  • Return the patties to the pan with the gravy. Continue cooking for 3-4 minutes, spooning the gravy over the patties and bringing the pan to a simmer. (note: you can use an instant read thermometer to check the internal temperature of the turkey meat. It is recommended to cook ground turkey to 165 degrees F)

Ingredients

  • Meat mixture:
  • 24 oz ground turkey 93% lean / 7% fat
  • 1/2 cup seasoned bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon ketchup
  • 2 teaspoons dry mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon liquid smoke (optional)
  • 2 teaspoons Better than Bouillon Beef ( sub. 1 cube beef bouillon, crumbled)
  • 2 tablespoons olive oil, divided
  • Onion Gravy:
  • 1 tablespoon olive oil
  • 1 large yellow onion, halved and thinly sliced
  • 2 cups low sodium beef stock
  • 1 tablespoon ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon corn starch
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon pepper, or to taste
  • 1/4 cup chopped parsley
