Quick and Easy Roasted Okra

Our simple okra recipe takes little time to prepare and is a wonderful side dish for just about any protein. While Okra can have a reputation for being slimy, this method of cooking it eliminates any sliminess, leaving a great tasting and crispy side dish!

This Baked Okra Recipe is surprisingly easy to make (using just three ingredients), and okra is an extremely healthy for your family to eat. Okra is packed with nutrients such as Vitamin C, Vitamin K, and antioxidants. These delicious baked vegetable crisps are a much healthier alternative to french fries.

The cooking method we use allows okra’s naturally nutty and sweet flavor to stand out. Initially the okra is cooked with a foil covering which creates steam that tenderizes the thicker parts of the okra pods. Then, roasting the okra under high heat dehydrates the pods, creating a crispy and dry texture.

Main Ingredients

This recipe uses super easy ingredients that can be purchased from a local grocery store if they are not already in your kitchen. Read the Recipe Card for the measurements.

  • Okra Use fresh okra for this recipe. Okra is available year-round, with a peak season during the summer months into early fall. The pods are slender and green, and mature pods to use should be 3-4 inches long. Select pods that are the same diameter for even cooking. Some varieties can grow as long as 9 inches, but okra tastes better when it is smaller.
  • Olive Oil – Coats the okra pods for roasting them in the oven and helps the salt stick.
  • Salt – It’s really the only spice needed for this simple and delicious recipe. For a little heat, you can also add black pepper or cayenne pepper.

How to make Quick and Easy Roasted Okra:

Step 1: Prep It

  • Set the oven rack to the middle position and preheat to 425 degrees F. 
  • Wash the okra pods and pat them dry.

  • Cut the hard stems off of the tops of the okras and carefully slice each pod in half, lengthwise.

Step 2: Season It

  • Place the cut okra pods in a large bowl and toss together with olive oil and salt.

Step 3: Steam and Roast It

  • In a single layer, place the okra cut side down on a large rimmed baking sheet.
  • Cover the sheet pan with foil and place in the preheated 425 degree oven to bake for 10 minutes.

  • After 10 minutes of steam cooking, remove the foil and continue roasting the okras for an additional 12-15 minutes until the bottoms are brown, the edges and tips are crispy. For extra crispness, flip them over and return to the oven for an additional 3 minutes.

Remove from the oven and serve immediately as is or with garlic mayo (see recipe card).

Leftovers can be stored in the refrigerator in an airtight container for 2-3 days. Reheat in a 400 degree oven for 5 minutes.

Ingredients

  • 1 lb okra
  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt
  • Garlic Mayo
  • 1/4 cup mayonnaise
  • 
2 tablespoons ketchup

  • 1 clove garlic, mince (sub. garlic powder)
  • 1⁄4 teaspoon granulated sugar
  • Salt and cayenne pepper to taste

Instructions
