Sweet and Crunchy Chickpeas

Covered with cinnamon and brown sugar, these addictive roasted chickpeas are a great snack at school, on trips, or just to have around the house.

Preheat the oven to 400 degrees F. Spray a baking sheet with cooking spray and set aside.

Rinse, then dry chickpeas with a paper towel. Add chickpeas to the baking sheet and roast for 30 minutes turning once after 15 minutes.

While chickpeas are roasting, put together your spice mix. In a small bowl, stir together cinnamon, brown sugar, cayenne pepper and set aside.

Remove chickpeas from the oven and reduce oven temperature to 350 degrees F. Place chickpeas in a large bowl and drizzle with olive oil.

Toss to evenly coat. Sprinkle spice mix over chickpeas and gently mix together making sure spices are evenly distributed and taking care not to break the chickpeas into bits.

Empty chickpeas onto prepared baking sheet and spread out in a single layer. Ensuring the chickpeas are not on top of each other is very important, as this will guarantee they come out crunchy.

Roast in the preheated oven at 350 degrees for 30 minutes until crispy and golden brown.

Remove from oven and place chickpeas in a large bowl, drizzle with maple syrup and salt. Toss to evenly coat.

Empty chickpeas back onto the same baking sheet, spread out in a single layer and bake in the 350 degree oven for an additional 5-10 minutes.

These crunchy roasted chickpeas are now ready to be served.
