Simple Summer Macaroni Salad

The perfect side dish with so many summer meals, this healthy and easy macaroni salad is amazingly simple to prepare!

Bring a medium pot of lightly salted water to a boil. Add the macaroni and cook until al dente, about 7 minutes. Rinse under cold water and drain well. Set aside to cool completely.

In a medium bowl, mix together the reduced fat mayonnaise, vinegar, pickle juice, honey, mustard, salt and pepper; set aside.

Dice the bell peppers and celery, chop the scallions, and shred the carrots; set aside.

In a large bowl add the pasta and veggies. Add the dressing and toss salad to evenly coat.

Taste to adjust for salt, pepper and acid (vinegar or pickle juice). Once you're happy with the seasoning, cover and refrigerate for at least an hour before serving or overnight for the best flavor.

Garnish with reserved scallions or chives before serving.
