Amazing Thai Peanut Sauce

This tangy, sweet, and spicy Thai Peanut Sauce pairs perfectly with an endless possibility of foods!

Ingredients  1/4 cup creamy peanut butter  2 tablespoons unseasoned rice vinegar  2 tablespoons fresh lime juice, from one lime  1 tablespoon vegetable oil  2 tablespoons low sodium soy sauce  2 tablespoons honey  2 tablespoons sugar  2 garlic cloves, roughly chopped  1 tablespoon grated ginger  2 teaspoons chili garlic sauce (or to taste) or sriracha  1/2 cup fresh cilantro, loosely packed

Squeeze the lime, peel and chop the ginger and garlic. Combine all of the ingredients except for the cilantro in a blender or food processor

Blend until completely smooth. Scrape down the sides of the food processor or blender with a rubber spatula.

Add the cilantro (stems included) and process for a few seconds until the cilantro is finely chopped.

Remove sauce from food processor and enjoy immediately or store in the refrigerator in an air tight container for up to 3-4 days.
