While these Tasty Roasted Chickpeas have a crunch that can be similar to nuts, they are a terrific option for anyone or any family that has to manage a nut allergy. This also makes for an amazing gluten free snack as well.

Main Ingredients

This recipe uses super easy ingredients that can be purchased from a local grocery store if they are not already in your pantry. Read the Recipe Card for the measurements.

  • Chickpeas – is the star ingredient of this Chili Lime Flavored Chickpeas recipe. For this recipe, we use dried chickpeas that were rehydrated and cooked in a slow cooker. If you are busy, you can choose to use canned chickpeas. They need to be drained, rinsed and dried in order to have your chickpeas get crispy when roasting in the oven. 
  • Pure Maple Syrup – We love the caramelly flavor and natural sweetness added by maple syrup when coated on chickpeas. Honey can also be used as a substitute.
  • Lime Juice – Adds a tart, fruity, acidic taste with just a slight hint of sweetness, and blends perfectly with the chili seasoning.
  • Chili Seasoning – We use Tajin brand, but you can use any brand you prefer such as Trader Joes. This seasoning adds a slightly spicy (but not too hot!) and tangy flavor.
  • Olive Oil – This helps the spices stick to and coat the chickpeas while helping to give it that addictive crunch. You may use avocado oil as well.

How To Make Chili Lime Flavored Roasted Chickpeas

Step 1: Prep

  • Preheat the oven to 400 degrees F. Spray a large baking sheet with cooking spray and set aside.

Step 2: Dry Roast

  • If using canned chickpeas, rinse thoroughly.
  • Lay the chickpeas out on paper towel to absorb any moisture.
  • Next, add the chickpeas to the prepared baking sheet and roast for 30 minutes turning once after 15 minutes.

Step 3: Mix It Up

  • Remove chickpeas from the oven and reduce oven temperature to 350 degrees F.
  • Place the chickpeas in a large bowl and drizzle with olive oil, lime juice and maple syrup. With a rubber spatula, toss to evenly coat.

  • Sprinkle the chili lime seasoning over the chickpeas and gently mix together making sure the spices are evenly distributed and taking care not to break the chickpeas into bits.

Step 4: Baking It

  • Empty chickpeas back onto the baking sheet and spread in a single layer. You can line the baking sheet with parchment for easy cleanup, but not necessary.
  • Bake in the preheated oven at 350 degrees for 30 minutes until crispy and golden brown, flipping them over halfway through.

  • Remove from the oven and do a taste test for doneness. If the chickpeas are still a bit mealy in the middle, turn the oven off, with the chickpeas still in the oven, and let them sit for an additional 10-20 minutes.

Expert Tips

  • Ensuring the chickpeas are not on top of each other is very important, as this will guarantee they come out crunchy. 
  • If the chickpeas are still slightly mealy in the middle, turn off the oven and let chickpeas sit in the warm oven for an additional 10-20 minutes.
  • Once completely cooled, these chickpeas can be stored in an airtight container for up to two weeks.

  • 3 cups cooked chickpeas or 2 cans rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons pure maple syrup
  • 2 tablespoons chili lime seasoning, such as Tajin or Trader Joe's brand

Instructions

  1. Preheat the oven to 400 degrees F. Spray a large baking sheet with cooking spray and set aside.
